Thank you very much, I'm Kaneko.
So today I'm going to talk about something that happened about one to two months ago.
It's still summer.
I came fishing.
The season has already started and they're biting.
I'm getting tons of bites.
Here I go.
With this, reeling fast, dropping it down and getting hits in mid-water, that's the pattern.
Today.
やった、Yes,
Here it comes, here it comes, here it comes. Oh,
ある。There it is.
Catching fish really depends on the mood.
It's common that they're biting today but not at all tomorrow.
And today, well, they're biting, so I'll catch some tasty fish today.
Yes, I caught this.
This is a Spanish mackerel I caught on August 17th.
It looks a bit thin, but surprisingly it has good fat when filleted.
It's still firm, properly dispatched, and brought home in good condition.
Let's fillet this and eat it.
After resting it for a day, it'll be just delicious tomorrow. Spanish mackerel
which is a young sawara.
It's the most delicious Spanish mackerel caught in Ise Bay.
Yes, I caught them.
I caught four.
This one is a bit thin.
And this one is a bit thicker.
But in two more months, they'll get even more amazing.
Not like this.
Let's try filleting one.
I brought the real seafood.
Welcome.
Welcome.
Well, I'll go fillet it.
How's the fat?
Wow, the flesh is still super firm.
How is it.
Oh, but this is good flesh.
This is the flesh of a mid-August Ise Bay Spanish mackerel.
It still looks a bit lean, but it does have solid fat.
Look, it has nice marbling like this.
From now on it's just going to get better and better.
Yes, like this, the fat marbling is done.
The cross-section looks like this, still quite light.
これです。Here it is.
Isn't this just right?
The oily feeling.
It's really light.
It's very delicious.
It has just the right amount of fat.
Look, it goes well with soy sauce too.
Delicious.
I wonder what it will be like in another month or two.
Sorry to interrupt the video.
It's started again this month.
Our ordered items introduction corner.
This month, November's product is this.
It's the Shan seafood chige hot pot set.
1These vegetables are two bags' worth. One
bag looks like this.
We were really particular about this fish this time.
A phantom fish, called Aohirasu.
It's a butterfish-order fish, so its size is like a medai-class.
It looks like a mamedai.
It's insanely fatty.
I think it's top-class delicious when made into a hot pot.
It melts the moment you put it in your mouth.
And not only that, we selected two kinds of extremely rare mero fillets.
We selected fish with umami that won't lose to the spicy chige, so it's super delicious.
You don't need anything else.
With this you can make a seafood chige hot pot.
The great thing is you can compare tastes in one pot.
So first, 150cc per bag into the pot.
So today I'm making two bags' worth, so I'll add 300cc.
Yes, then mix and dissolve it.
And at this stage, bring out the frozen vegetables. Plop
と。in.
If you have some leftover vegetables sitting half-finished in the fridge, just cut those up and put them all in too.
The great thing about hot pot is you can eat lots of vegetables, so now I'll add the fish.
Cover it and cook to your liking, but if you heat it for about 15 minutes, even fillets added frozen should cook through.
Okay, about 15 minutes have passed.
Let's open it.
Open.
Looks delicious.
It smells incredibly good.
うん。Yeah.
Delicious.
うん。Yeah.
This fish goes really well with kimchi.
Yeah, it's kind of like halfway between Spanish mackerel and yellowtail.
And next, mero kama.
It's a fish that suits a strong seasoning.
Let's eat.
So good, this is bound to be delicious.
After eating this, the finale is also recommended.
You can add noodles to make ramen, or add rice to make porridge.
So this month's feast box was the aohirasu and mero chige hot pot set.
And this month too, first-month customers can join for 980 yen, so please consider joining the Kimagure Gochisou-bin.
Now back to the video.
I wonder what ever happened to that Spanish mackerel. My boat
We're bringing this to you from on top of...
And today's target is, well, autumn.
That's right, we came to target Spanish mackerel.
We've had filefish, whiting, and next is Spanish mackerel.
Right now at the market there are lots of really good Spanish mackerel around.
Spanish mackerel storing up lots of fat for this autumn season are just incredibly delicious.
Today we came to target that Spanish mackerel by casting.
Well then, let's head to the point.
A boat is great after all, feels good.
出港。Departing port.
Yes, while I was getting the camera ready, the staff caught one.
It's a Spanish mackerel.
This is big.
70How big is this. 70
It's about centimeters.
Wow, it's already totally plump.
This is Spanish mackerel at this time of year.
Let's dispatch it.
Don't thrash, don't thrash.
Spanish mackerel have extremely sharp teeth, so they're dangerous.
So you must never touch it with your hands.
Okay, first I'll remove the lure.
Then I'll dispatch it.
Spanish mackerel won't survive even in a live well, so I dispatch it right away.
This is important.
Then I cut the gills and peel off the jaw membrane, and yes, blood is coming out.
Then I'll shake it, shake shake shake shake.
You have to bleed it.
No, Takashi, nice job.
Beginner's luck, nice.
あります。There is.
By the way, I'll fillet this one fish into one fillet.
Then the blood has drained.
Remove the tail, tap tap tap tap, and yes, like this.
Then above this backbone, this is the nerve, so I'll insert the nerve spike.
Yes, like this I'll destroy the nerves.
This is perfect ikejime with nerve destruction.
Then I'll make ice saltwater, yes.
Okay.
This is the perfect preparation for Spanish mackerel.
Perfect.
It looks like I caught it myself.
Amazing.
The feeding frenzy is coming soon.
Really?
きた? Is it here? A young Spanish mackerel?
Oh wow.
Oshokei.
You did it. Whoa.
Amazing.
So annoying.
Awesome.
Oh, nice sagoshi.
Found a school. Sagoschi
I wanted this. Sagoschi
I wanted it.
I'll eat this, I'll eat this.
When?
今います。Right now.
It's full of schools here.
Reel at hand speed. Bam
Come on. Bam
Come on.
Here it comes, here it comes, here it comes, here it comes, here it comes.
食った。It bit.
食った。It bit.
It bit, it bit, it bit, it bit.
A bit big.
This one's a bit big.
Ah, but, but it looks like a sagoshi.
Here it comes, here it comes, here it comes, here it comes.
Oh, nice.
Please, right here, 50 percent, don't lose it.
Slowly, slowly, slowly, slowly.
Okay, here I go.
Ah, no way, kidding, no way.
Here I go, here I go, here I go, here I go.
Already, already, next, next, next, next, it's big.
やった。Yes.
The one who just cast, the one who just cast.
Thank you. Oh,
Isn't it a bit big?
A bit of a size up.
It's a really nice-sized sagoshi.
Wow, yes, this makes me happy.
It's the best.
It's important to process this carefully here.
Good, and, good, and.
Ah, here we go.
First, kill it.
And cut the gill membrane.
And cut off the tail.
A bit of tasty-looking flesh is showing here.
Then here on the bone.
This is the nerve, so insert the nerve wire.
Right here.
Yes yes yes yes yes, removing the nerves properly, yes, okay, done, splash splash splash splash
Okay, wait, this is like a tiny hard lure, really about three centimeters, I had looked it up
It came, it came, it came
Happy, it's a sagoshi, oh, here it comes, here it comes, here it comes, here it comes, a bit bigger than last time, oh
Take it easy, take it easy
Everyone
Thanks, that last one was big, oh this one's thick too, nice young Spanish mackerel
Nice fish. Well then, let's dig in.
Unhook it, cut the gills, and rinse with water — this one extra step is incredibly important.
Even when the bite is on, if you skip this, that hard-earned fish loses its value.
The one I caught earlier had more fat.
Okay, thread it through carefully, and here it is.
That's perfect.
Nice Spanish mackerel.
We could just go home with this, right?
Yeah, three is plenty, so let's head back to the studio and cook them.
So, heading home.
よし。Alright.
So these are Spanish mackerel, and isn't the quality just amazing.
They're all good, but the very first one I caught felt especially good.
But overall they're all really great.
Even after bringing them home, they're still firm and plump.
Right now it's mid-October, but even back in August they already had quite a lot of fat.
And now about 2 months have passed since then, right in the middle of the season, Spanish mackerel.
I wonder what they're like.
First, for now I'll just gut them.
I always make sure to gut them as quickly as possible.
They've been eating lots of bait, and I properly did the nerve removal too, so this is top-quality handling.
Man, there were really a lot of boats out today.
Honestly, there were like 150 boats.
Everyone was targeting Spanish mackerel.
It was a full-on battle.
Well, it was Sunday too, so it was crazy.
So, how is it.
Wow, looks good.
The innards are clean.
Nice clean innards.
This is all fat.
And these eggs are still small.
That's what's good.
As spring comes, these get bigger.
And this is the blood membrane.
For Spanish mackerel, the blood membrane has this net-like film
spread all over it, with the blood underneath, so first cut through this net-like membrane.
And then scrape it open with a spoon or something.
Yes, this cleans it up nicely.
And finish with brushing.
If you do it too hard the flesh will tear, so
gently, gently.
And then wash it clean here.
And with that, it's perfect.
I want to show you all the bait.
When I interact with viewers, something I'm often told, especially by kids, is to do a stomach check.
I really love it.
People tell me to do it every time.
So I want to keep doing it, but, oh,
This has quite a lot in the stomach.
I wonder if the last one had some in it. Oh,
The last one has a lot in it.
Shall we take a look at them all together later?
No, they're all amazing.
This is amazing.
This one has nothing in it at all.
Empty.
This one looks like it has something in it.
First, I'll remove the gills
あ、and, oh,
this one has nothing in it.
うん。Yeah.
It's chilled all the way through the guts.
So the very first one was the best.
Well then, let's get started.
What's inside the stomach series.
Here we go.
Whoa.
A lot is coming out.
Okay. Squeeze squeeze squeeze squeeze.
はい。Yes.
It came out.
Doesn't this look familiar to everyone?
They sell these at supermarkets all the time, right?
These are Japanese anchovies, the raw ingredient for niboshi.
They're all Japanese anchovies.
All of them.
When we caught them, they already had a lot of Japanese anchovies inside.
This size.
They're eating this size.
It doesn't smell at all.
Because it's fresh.
So if I don't remove the stomach quickly, the smell of these anchovies will transfer to the belly.
I want to get it to this state on the very day I catch it.
It really doesn't smell at all.
Wow, this is the best one.
This one is the best.
Okay, then I'll pat the moisture off this one.
Wipe it thoroughly.
And with Spanish mackerel or Japanese Spanish mackerel, when removing this moisture, you have to watch out for these teeth.
The teeth are incredibly sharp.
So be very careful when stroking toward the head.
They'll easily go right through the paper towel and into your finger.
The teeth are really dangerous.
They'll slice you clean open.
For Spanish mackerel, there's even a term called 'sawara cutter' because they can cut through leader in an instant.
It has tough teeth. Like, pike conger
or moray eels, but it's dangerous in a different way.
Then I'll wrap it in paper and age it, for me it's green perch.
This is definitely right.
Yes, with this, I'll let it rest for one day.
As expected, right after death before rigor mortis sets in, when it's this floppy, it tastes a bit bland, but once rigor mortis sets in, surprisingly
compared to other white fish, the umami comes out.
Surprisingly, it's delicious even eaten fresh-caught.
But still, I think letting it rest for a day brings out more sweetness.
If you eat it right after catching, it's tastier seared.
And when eating it seared, after rinsing with water, rub it well like this.
It has fine scales and slime-like stuff on it, so remove that.
これ。This.
Spanish mackerel has this unique fishy, green smell in its skin.
If you remove that as much as possible and then sear it thoroughly, that smell won't bother you.
I also sear it or remove the skin depending on my mood.
Next is plastic wrap.
When wrapping a big fish, first lay one sheet underneath, then place it on top.
Make sure it's wide enough to fit the fish body, then cover it from above with the same width.
Then push out the air and stick the wrap together, and then fold it up.
これでOK。That's OK.
Then, how is it after one day.
Yes, so one day has passed.
Let's open it up.
Yes, so it looks like this.
The eyes are still glossy.
Even when held like this, it stands up straight, right.
That's proof of outstanding freshness.
Now, today I'm going to do what I've always wanted to do with this.
A whole fish saikyo-yaki.
A Spanish mackerel is a bit too big.
So I wanted to do it with a young Spanish mackerel, but I wanted to do it with one in fatty season, so I've been waiting.
And if possible I wanted to use one I caught myself, so I'm doing it today.
Well, the remaining Spanish mackerel.
I have a dinner party at an acquaintance's restaurant today, so I'll bring it.
Then.
Since I'm marinating it whole, I'll clean it more thoroughly.
Thoroughly remove things like leftover gills that would cause a rotten smell.
But from here on, I won't use any more water.
I'm looking forward to this.
First, I want to dehydrate this a bit.
When making normal saikyo-yaki, you cut it into fillets and salt it lightly to draw out water, but with this whole Spanish mackerel
even if you salt it, the skin guards it and the moisture won't come out of the flesh well, I think.
So I'll make some cuts.
And by making cuts and applying salt there,
I'll draw out the moisture from inside the flesh, and at the same time make cuts so the saikyo miso aroma penetrates deeper when marinated.
And how to make the cuts, hmm, this takes a lot of sense.
Shall I make them like this.
With the reliable blue, and for those who are careful, the young Spanish mackerel also has subtle scales on it.
If you scrape them off, there's just a tiny little bit on it.
This is beautiful work if you get this off cleanly.
Alright, then I'll make the cuts.
Wow, it feels like I'm doing something naughty.
Don't cut too deep, but go almost all the way through the inside too.
This will let the miso flavor soak in.
On this side too, like this
Like this.
Then I'll do the same on this side.
Yes, like this.
Then I'll add salt here.
Yes, lightly rub salt inside the belly as well.
Yes, once it's salted all over, let it sit for about 30 minutes.
Since we're at it, let's fillet one whole fish.
Let's see what the quality is like.
First, remove the head.
It should be pure white.
I dispatched it properly on the boat, so I'm expecting pure white with no blood in the flesh.
No, the blue one is easier to fillet with.
For fish with soft flesh like mackerel, this kind of thin-bladed knife is really easy to fillet with.
Yes, oh.
This is what I mean.
Yeah, that's right.
But even so, it's still a bit thin.
A really good Spanish mackerel is even more than this, it's amazing.
It's pure white.
Without any bias because I caught it myself, it's about 70 points
だな。I'd say.
うん。あ、Yeah. Ah,
But it's still a good Spanish mackerel.
I wish we could catch Spanish mackerel like this all year round.
Look, just look at the fat on this belly.
It's wonderful. And for Spanish mackerel
this part here is all you need.
I think you don't need to remove the belly bones along this membrane if you're going to cook it with heat.
If you're making sashimi, I think it's better to remove them though.
And I have a favorite way to eat Spanish mackerel, and that's fried.
Spanish mackerel fry is really delicious.
It's well known that frying a lean fish adds oil and makes it tasty, but fry made with this fatty fish is even fluffier
and delicious.
So when you catch a lot of Spanish mackerel, or buy it cheap, or get given a lot, fillet it into three pieces and finish removing the bones like this.
Spanish mackerel flesh is soft, so the bones come out easily.
And Spanish mackerel has very long bones up to around here, but from around the middle they become small bones.
And roughly from the vent toward the tail side, you hardly notice the center bones.
So just remove the bones from this part.
Anyway, this first one is very sharp.
There's an incredibly hard one in there, and up to about the third one they're really thick.
Yeah, up to around here.
And from around here they gradually get smaller.
Yes, and once it's like this there are no more bones, so you can sear it and cut it for sashimi, or fry it, simmer it, grill it, it'll be appreciated however you cook it.
In industry terms, you'd call this a fillet, a fillet.
When it's in fillet form, it's very easy to handle.
When freezing for stock, it's convenient to make them into fillets like this, wrap them tightly, and freeze them.
At this time of year, my home freezer is often stocked with these Spanish mackerel fillets as reserves.
Yes, vacuum-sealed like this, and then freeze it.
Yes, then, oh, I've started sweating quite a bit.
Just a little more.
While we wait a little longer, let's make the miso marinade.
First, put in 1 kilo of white miso.
Since it's a whole fish today, I'll prepare a bit more.
Today I'll blend two types of white miso.
To give the flavor more depth.
Next, I'll boil off the sake and mirin.
80 of hon-mirin.
80。The same amount of sake, 80.
Once the alcohol has cooked off, add 20 grams of coarse sugar here.
And dissolve the coarse sugar well.
Then let it cool down well.
While it's cooling, add a little light soy sauce to the miso, about a tablespoon, just for a touch of aroma.
Then I'll combine the well-chilled sake and mirin.
Mix it well.
If you like the scent of yuzu, you could add some dried yuzu peel here.
Today I'll go with the orthodox method.
The softness is about like this.
Thick enough that it falls in blobs, plop plop.
Yes, okay.
The miso bed is complete.
Then the Spanish mackerel looks good.
Look, quite a lot of water has come out.
Then carefully wipe off this water, carefully, carefully, and inside the belly cleanly, cleanly.
You may feel like using water, but you must not use water.
It will get watery, so if you really want to rinse it with some liquid, use sake.
I think it would be good to pour a little sake over it.
Wow, I wonder how it will turn out. I'm looking forward to it.
Then it's about how to marinate this.
A container this can fit into.
Today I'm also using Pichit sheets.
Then place it here, oh, it's a perfect fit.
Well, you don't need to marinate the head and tail, just the flesh part needs to be covered.
Then I'll spread the miso.
First, I'll spread it starting from inside the belly.
Take the miso and spread it firmly inside the belly, kneading it firmly into the flesh,
Pressing miso firmly into every gap like this.
It went firmly into the gaps.
Place it, then smooth it out and press it down.
Flip it over, place it, smooth it out, and since it hasn't gotten into the gaps yet, press it in like this.
I wonder how this will turn out.
I'm really looking forward to it.
Then spread it on generously.
よし。Alright.
Then cover it with a Pichit sheet on top and refrigerate this for 2 days.
This was from the day before yesterday, well, maybe 2 days or 3 days ago, but for now let's go with 2 days.
So, how is it after 2 days.
Yes, so here we are 3 days later.
This is the first attempt so I wonder what happened. Pichit sheet
did this have any effect, or maybe not much effect.
It hasn't absorbed that much of the miso's moisture.
Yes, then I'll remove the miso from this once.
By hand like this.
Oh, it's soaked in amazingly.
Look look look look look.
Then I'll thoroughly remove the miso where I can by hand, and the miso that got into the gaps, I want to wash that off.
If miso is left on, it burns easily when grilled.
But, I want to remove this miso, and if I wash it with water it'll get watery, and all the effort of
この最強味噌の甘い味付けだとか味噌のいい香りがお水で飛んで台無しになってしまいますので、this amazing miso's sweet seasoning and nice miso aroma would be washed away by water and ruined, so
できるだけまずペーパーで拭き取って、first wipe it off as much as possible with paper,
then rinse it off with sake.
It's a sake wash.
I'll wash off this miso that's stuck in the gaps.
You don't have to remove it perfectly.
It's fine if a little is left on.
OK。Really, just a tiny bit is OK.
But if too much is left it's bad.
Alright, this is looking good.
Then wipe off the moisture well, and if I grill it as is it's still watery.
I want to dry this like overnight for one, two, three nights.
If it were a bit cooler outside I could dry it outside, but it's still a little
hot, so I'll dry it with cold air in the cold table for 3 days.
Then the surface will get crisp and it'll grill up nicely.
By the way, in terms of freshness it's totally fine.
As expected, since the nerves were removed, the processing is perfect.
Nice.
Okay, then for this
I'll put chopsticks on a tray, put a rack on top to lift it up, and place the sagoshi on top so cold air flows from below and above
and let it rest uncovered in the fridge for 3 days like this.
So, see you in 3 days.
いい。Good.
It's turned out really nicely.
Look at this.
The surface has dried a bit and the cuts have opened up like this.
Look, like this, this side is properly dried too.
Inside the belly too, wow, nice.
Wow, it smells so good.
It doesn't smell fishy at all.
Wow, what is this.
That clean dried-fish smell, not fishy, just a faint fish scent, like fresh fish.
It doesn't really smell like miso.
It smells a little sweet, but not like miso.
Now I'll grill this slowly over low heat.
Now then, let's grill it.
I'll go with under-fire grilling after a long time.
I'll grill it over as low and distant heat as possible.
I'll keep fine-tuning this a lot.
Like, I put my hand here, oh it's a bit hot, but I can bear it, about that level.
Yes, then I'll start grilling.
Right.
I'll go slowly over low heat.
So the tail doesn't burn.
Yes, like this, I'll grill it really slowly.
I'll take about thirty minutes to an hour to cook it thoroughly to the center.
Now, there's a nice oily aroma coming up.
Let's flip it over.
One, two, go... oh, that was a bit weak.
Oh, that looks delicious.
This part here is a bit of a shame, though.
It's incredibly good.
This looks tasty.
The heat has properly gone all the way through. Okay, okay.
So once I grill the back side well too.
I'll plate it up further.
Okay, so it's done grilling.
The back side looks nice too.
It smells incredibly good.
It's no joke.
Then I'll plate it up over there.
Wow, this part is a shame.
So frustrating.
Then I'll add some pickled ginger stem.
And here it is, ta-da.
It's kabosu.
This year too, I received lots of kabosu from the National Kabosu Association, thank you very much.
Every year the kabosu association gives them to me.
I'll hide it like this, like this.
Oh, that's nice.
Putting it here throws off the balance a bit, so this is fine.
Yes, so here it is, the whole Saikyo-yaki made with the fatty Spanish mackerel I caught myself in Ise Bay, complete.
Yes, so it's complete.
Let's eat.
Alright, let's dig in.
It turned out incredibly well, though.
Now, the question is the taste.
But the texture of the flesh is perfectly Saikyo-yaki, the miso has soaked right through to the center.
Those cuts were really important after all.
It's properly cooked through.
Then I'll take this part here.
Let's eat.
うん。Mm.
うま。Delicious.
Amazing.
So delicious.
Wow, wow.
The miso flavor goes all the way through to the center.
Delicious, on the sweeter side.
The Spanish mackerel flesh itself is already sweet and tasty to begin with, and then the sweetness of this Saikyo miso is added to it, creating a complex sweetness.
And the aroma of the miso is exquisite.
It smells so incredibly good.
Well, and this crispy skin, you don't really get this very often.
This crispiness, the fluffy flesh and the crispy skin, the contrast is so good.
So by making lots of cuts, you can fry the skin in the fish's own oil, so as a grilled dish, this method works.
It's insanely delicious, seriously so good I want to share it with someone.
Kabosu, with this much fat, even this tail part is fatty too.
Let's eat.
うま。Delicious.
I guess it's because we cooked it with the bones in.
It's juicier than usual.
うん。Yeah.
We let it sit for three days after marinating it, right?
That was absolutely the right call.
It feels like the umami has become even more concentrated.
And the fact that it's a fish I caught myself makes it the best.
The bottom part is perfect too.
Let's go here next.
The collar.
Wow, that looks delicious. Th-this,
This is definitely going to be delicious.
Just this slight lingering taste of miso, you know.
This is insane.
Let's eat.
Wow, delicious.
The collar is delicious.
Wow, this is amazing.
Spanish mackerel really is best as Saikyo-yaki.
It's too good.
It was worth doing it whole.
What do you think of this?
With a fillet, you probably wouldn't get this fluffy texture.
This is strange, you know.
Even when you eat the flesh deep inside, it has this solid miso aroma and umami.
It's sweet, yet juicy and plump.
If it were a fillet, you probably wouldn't get this fluffy feeling.
For the crispiness, since you coat both sides with miso and grill both sides, only the center would stay fluffy, but this fluffy flesh around the bones
This part here.
Is delicious.
Yeah, it's just lightly flavored with miso, just lightly.
Yeah, it's salted just right.
If I had to say anything, at the salting stage, I could have salted it a bit more heavily, added a bit more salt.
Well, but for miso marinating, this level is probably just right.
Anyway, it's insanely delicious.
So for today, with this whole Spanish mackerel Saikyo-yaki, let's get to this drink here.
The Sei no Zen silver one.
I did look at sake, of course, but,
Today I'm going with a clean 7:3 part.
It's ice-cold.
はい。Yes.
Okay, all good.
A perfect 7:3.
Let's eat.
It's the best.
I'm getting bored of it.
Well then, I'll take my time eating.
Thank you for watching.
So, today I used the Spanish mackerel I caught myself, and made a whole saikyo-yaki with one entire fish, and my dream came true.
It was incredibly delicious.
うん。Yeah.
And this time the saikyo-yaki turned out really well.
And what I really learned is that for saikyo-yaki, instead of grilling it right after marinating, it's better to dry it for a day or two to concentrate the umami.
From now on, even when I make it with fillets, I'll probably add the drying step.
A lot of recipes online say to marinate in miso, then wipe off the miso and grill, but if you just wipe it off, some miso inevitably stays on and it tends to burn easily.
So like today, if you quickly rinse it with sake, it won't get soggy and you won't lose the miso aroma, so I think you should lightly give it a quick
さっと味噌洗い流してからquick rinse of the miso with sake, then
dry it uncovered in the fridge for a day or two, and grill it slowly over high heat, and you'll get delicious saikyo-yaki.
For an oily fish.
Saikyo-yaki goes incredibly well with this fish, so please everyone try making saikyo-yaki.
Once you get it to the drying stage, you can freeze it too, and it was delicious.
Yes, so I'll go fishing on my own boat again, fillet the fish, and eat it.
So thank you for watching today.
Bye-bye.
The Japanese-style room over there is a total mess right now, so I'm filming here.
The basement is under renovation.
Coming soon.
