A hearty, meaty, super Japanese-style hamburger steak, not mixed ground meat but 100% pork, and what I'm using today is this cold leftover rice.
It's okay if you only have a frying pan without a lid, you can still make it with this.
Even though it's pork, maybe the ginger works, zero smell.
Shall we go.
Here we are again at the old man's house of Masago Saryo.
Today, I'd like to make hamburger steak, the national idol of the side-dish world.
I'll cook in an environment similar to everyone's kitchen, so I'd be very grateful if you think, I could do this too.
Let's get started.
Today's ingredients are here.
Today it's 100% pork.
The reason for pork is, when you make a delicious hamburger steak, well, it really is proportional to the deliciousness of the beef, the deliciousness of the meat. Good
Buying mixed ground meat costs quite a bit, this does.
These days, you go to the supermarket to shop, right.
It's not about being cheap.
To shop smart, for hamburger steak, not mixed but 100% pork, if you've got no money today, go with this, that's the feeling.
One with plenty of fat and one with a bit less fat, it's up to your preference, whichever you like
I think you can choose.
Whether that meat is good or bad, well, it's the appearance, if the color is vivid it's good, and in a pack
I think it's probably in something like that, but tilt it a little, if water pools up like swoosh, you might want to avoid that one.
And what I want you to do first is.
Right.
Add a splash of water to the pork to hydrate it, put it in all at once, and knead well to blend this water in.
And lightly knead to hydrate with water.
That will directly lead to the juicy part as is, and put this hydrated one in the fridge to store for a bit.
Please keep this ground meat always in a cold state.
There's a proper reason why it has to be kept cold, protein starts to set at around 50 degrees.
So it won't warm up to 50 degrees, but beef, pork, chicken, there's the fatty part, right.
The melting of this fat, or rather the temperature it starts to melt out, starts around 30 degrees.
And with pork it's early, so around 30 degrees, you want it cold, keep working at below 10 degrees all along, that's suitable for hamburger steak.
So the fat doesn't escape outside, so keep it chilled all the time.
Just be careful about this point.
Okay, then seal it properly to put in the fridge.
Like this, store in the fridge.
The ingredients to put inside the ground meat for the hamburger steak.
I want to cut these up.
Basically mince them finely.
Any mushrooms you like are totally fine.
Normally for hamburger steak it's onion, right.
Onion is delicious, but this time I want to make it a hamburger steak pulled strongly toward Japanese food, so I deliberately left out the onion.
I think any mushrooms you like are totally fine, but maitake and meat really go great together.
Actually it softens meat, this has some kind of component or enzyme, and it seems to pair well with meat.
Next, lotus root.
The skin is edible since we fry it, but shall we peel it a bit.
Just do it roughly.
It's fine if a little remains.
Everyone can just use your peeler, it's totally fine.
It's fine.
Yes, I'll mince this too, so this is for texture rather than umami, when you eat the hamburger steak, a little crunchy, crispy
I want to leave that kind of texture, so I'm deliberately using lotus root too.
If the chop is large, the lumps make the hamburger steak crack easily when cooking, so that can cause cracking, so finer is better for this.
Alright, next let's do the green onions.
Cut a few of them lengthwise like this,
Something like this.
And wash the ginger well, you can use the skin, or peeling it is totally fine too.
Here we go.
I'll grate the daikon.
Yes, so this is daikon.
It's daikon.
I'll cut the myoga.
It's the kind to put a little on top of the finished hamburger.
For how to cut the myoga, let's go lengthwise.
Cut it lengthwise like this, and then we'll julienne it.
The fibers run lengthwise like this, so cut along the fibers.
Here the base is still connected.
Can you see this part?
And from here there's skin, but you remove this core like this
With this it's still connected, so now it's all separated, right.
Now we'll julienne this.
Like this, there's still a core left here.
Let's cut the core too.
It feels like maybe a bit much.
This is also to your taste.
Okay, then just cut the shiitake mushrooms.
Since we'll eat it, cutting like this on a slant is a bit wasteful.
Let's eat this part.
はい。Okay.
For color, we'll add some eggplant too, cut off the stem but right at the edge so as not to waste it
Cut it off.
I don't like the bottom part either, so trim it a bit.
And let's cut this lengthwise.
We'll cut it into thirds, it's a bit hard to make thirds but here we go.
About half of it can be in thirds.
Everyone can just do quarters.
Take off just half in a place like this, and then halve the rest.
They're a bit uneven in size.
Well, is something like this okay.
はい。Yes.
Now, have we moved to the handsome guy?
This is that minced stuff we cut earlier.
We'll saute this.
Now, ignite.
はい。Yes.
Let the oil coat a bit.
And since this is minced, the order doesn't really matter.
Shall we just put it all in at once.
These are ingredients to put into the hamburger ground meat, and this is
About 30 percent of the total hamburger amount, if it exceeds 30 percent the meat gets
easier to fall apart, so as long as it's within that, I think you can chop and add whatever you think will taste good.
When sauteing, I'll add just a pinch of salt.
It's the moisture the ingredients hold.
Just cook it until the moisture evaporates, kind of like that.
Just enough so it doesn't burn should be fine.
Yes, I'll turn off the heat here.
We'll mix the stir-fried ingredients into the ground meat from earlier and knead it, but since we went to the trouble of chilling the ground meat,
ちょっとこういう温かいもの入れると台無しになってしまうから、これも必ず冷ますっていうよりもこれも冷たくしてif we put something warm like this in, it'll ruin it, so be sure to cool this down too, or rather make this cold too,
Cool it down, to the point where you could even put it in the fridge.
But never do anything that would raise the temperature of the ground meat.
Let's cool this down a bit.
はい。Yes.
はい。Yes.
Now then, this is Buu-chan just taken out of the fridge.
And with the sauteed vegetables from earlier, we'll add these in and knead it all together.
For this hamburger, we'll knead this ground meat around.
You can really put in whatever you like for this.
Everyone uses panko breadcrumbs and such as a binder, right.
In Japanese cooking we don't use bread, so we don't really use panko, but instead we use fu.
Fu used to be in every home, but people don't really use it much now, do they.
No need to go out and buy it, so what I'll use today is this cold leftover rice.
Don't you have some leftover rice sitting in the fridge.
So leftovers are fine.
Leftovers, so if you have leftover panko you can use panko too.
But when you add it, make sure it's absolutely cold, cold rice.
You can use those guys left in the fridge.
And when you all open the fridge door, there are various shelves on the door side, and the top is usually the egg holder, right.
That egg holder usually has about 10 holes, but you don't always have 10 eggs.
In the empty egg hole spaces.
The ones placed there.
Like the little packets of red pickled ginger you got from Yoshigyu but didn't use.
Like the tiny mustard you didn't use with natto.
Those pile up a lot there, so if you put them in here it becomes a really original delicious flavor.
I'll knead it lightly.
Now let's add the seasonings.
Soy sauce, going in with the soy sauce.
And ginger, I'll add ginger too.
はい。Yes.
Since we're going for a Japanese style, I'll add miso too, miso.
And salt.
That was two pinches just now.
And a bit of potato starch, it acts kind of like a binder too, and since we're not using panko, I'll have it do the work here.
Okay, now I'll knead this together.
And when kneading, finish it quickly while it's still cold so the temperature of the chilled meat doesn't rise.
In fact, you'd do this over ice underneath.
If you were doing this professionally.
The type of miso is up to your preference.
So if anything, a sweeter miso might go better with this.
A sweet miso rather than a salty miso.
I think a sweet white miso or something like that would go better.
And you might wonder how far to knead this.
When you cut it like this, this line appears, right.
Here.
It's not that it's sticky, these strings are proof that the proteins are binding together.
So if this is coming out, it's okay, and if it's not, you need to knead it more.
Alright, then let's start shaping these.
First, we have to form the hamburg steaks.
We'll shape them and sizzle them in the frying pan, but let's place the shaped ones directly in the frying pan before it's heated.
If you put the shaped ones on a tray or plate for now, they can be hard to peel off and troublesome.
There are 3 of us today.
So let's roughly divide it into 3.
There are some size differences, but let's shape them like this.
It's better to remove the air from inside so they're less likely to crack.
I'm doing it roughly but trying to look cool, but this is fine, this is totally fine.
Everyone can just do it like this with plastic wrap to get the air out, that's enough for now.
And one more thing, you want the surface to be as smooth as possible.
Glossy, and cracks start from places like this, so make sure to blend that in well
なじませて、あのハンバーグの形はまたあの皆さん好き好きでいいんだけど、平たくいこうかな、and the shape of the hamburger is up to you, but I'll go flat,
Shall we make it like a croquette, more oval than round? Since it's 100% pork, you have to cook it through completely.
So it needs to cook through easily given the frying pan area, so I think about this shape is good.
Speaking of my mom again, sorry, but my mom's hamburg steaks were round like meatballs.
Well, my mom wasn't very good at meat dishes,
so she probably just shaped them as hamburg and cooked them as is.
And hamburgs of that shape shrink as they cook and end up like dumplings anyway.
Her hamburgs were really burnt.
And the sauce was always ketchup.
But it was delicious.
Now, these are ready.
We'll cook the hamburg steaks like this, sizzling.
Now I'll cook the hamburg steaks.
Yes, these hamburgs, I'll put them on the heat.
着火。Ignition.
Let's go on high heat until it starts sizzling.
I'll also grill shiitake mushrooms and eggplant with these, but let's wait until some fat comes out of them.
And today the meat is seasoned quite strongly, so it burns more easily than the hamburgs you usually make.
Since it burns easily, once it sizzles on high heat, turn it down to medium or slightly low
焦げない程度にしといて、こうやってちょっとこうスルスルともう動くような感じだったらもうしいたけとかto keep it from burning, and when it slides around like this, then put the shiitake mushrooms and
eggplant in the empty spaces.
It's a bit packed like a crowded train, but let's add the eggplant too.
Since I'm making them flat this time, just flip them over and once cooked it's done,
I want them to feel more grilled rather than Japanese-style steamed.
Thick ones are worrying so you have to cover and steam them, but I'll flip them over.
I don't think they'll break, looks good, doesn't it.
They turned out like this.
And wait, the vegetables are getting nicely cooked too.
To check if the hamburg is cooked, it's the usual trick.
A toothpick.
Poke it like this, and if cloudy juice comes out from inside, it's no good.
If it's clear, it's fine.
Well, this is fine.
And since it's pork, let's cook it thoroughly.
Okay, they're cooked, so first, the main dish, the star of the show.
I'll plate just these on a dish.
This is an expensive plate.
So look, with this kind of thickness, you don't even need to steam-cook it, the heat goes through perfectly, so it's fine.
So those of you who only have a frying pan without a lid, you'll be fine.
This will work too.
Let's adjust the hamburger steak by its thickness.
And the remaining vegetables, um, leaving these as they are, in this pot, look, there's this kind of browning.
This is the umami from the meat.
Don't wash this off.
Add the seasonings that will become the sauce to this, dissolve this and pour it over, that's the idea.
No, first the sake
Okay, I'll add it in.
Starting with the sake, while burning off the alcohol from the sake a bit
And like washing the frying pan, dissolve the parts where the umami is stuck, it's a bit too fast so I turned it down to low heat.
Yes, next seasoning, soy sauce
Vinegar, you're like, vinegar, huh?
It is vinegar.
And since we're putting grated daikon on top, that makes it refreshing.
And lastly, a little sugar, I'll add the sugar.
I think this is fine as is.
Now then, let's plate it up.
We have shiso leaves.
I'll place the shiso leaf.
And on top of the shiso leaf, the grated daikon we just grated, lay it out.
Yes, I'll pour the sauce on.
Yes, and it's done.
This is the idol of the side-dish world, the hamburger steak.
For the detailed recipe, please check the Kurashiru app.
Well, shall we dig in?
First, the hamburger steak.
Move the vegetables aside and go for the hamburger steak side.
The shiso and grated daikon, it's better to eat them together, like this, here I go
Oh,
Super Japanese-style, properly meaty
It's pork, but maybe the ginger is working, zero odor, perhaps because the hamburger mix has green onion and lotus root and such in it, this on the outside, this
Japanese ingredients also match perfectly, please definitely give it a try
